Curried Rice with Peppers and Raisins

Curried rice and raisins picture6 cups cooked rice
1/2 package silken tofu
1/3 cup lemon juice
1/4 cup rice vinegar
1 tbsp. curry powder
3/4 cup raisins
3 stalks celery, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 bunch green onions, diced
1/4 red onion, diced
1 can (15 oz) garbanzo beans, drained
salt to taste

In a blender, combine tofu, vinegar, lemon juice, and curry powder. Mix rice, raisins, celery, bell peppers, onions, and garbanzo beans in large mixing bowl. Pour tofu-curry dressing over the top and mix well. Serve chilled.
